When Hudson Shotwell was getting ready to roast coffee beans in the back room of Trident he went to visit growers to select beans and learn how to roast. Now he hones his art, hovering over small batches of organic, fairly traded beans. Out front, the staff—Peter Holt, Tracy Stevens and Angie Halpern—is experienced and dedicated. “We’re not allowed to make coffee,” says Halpern, “unless we’re properly trained.” Plus, they’ve got a new Setco brewing machine for you to test out.
